    You ring an unmarked bell on an unmarked door below street level, and that's the whole game announced before you've ordered a drink. Inside, this cocktail bar in Chelsea is all deep armchairs, shaded lamps, a fireplace, and curtained alcoves fitted with a buzzer to summon your server when you're ready. It's a speakeasy setup done without irony, and the room is quiet enough that people actually talk to each other.
