  1. A fermentation cellar next to the dining room and a kitchen garden visible from the terrace set the tone at this Michelin-starred fine dining room tucked into Liège's old ramparts. The chef, a local who came home, runs a plant-forward kitchen that leans on charcoal and wood fire and keeps its suppliers close enough to name. Nature finds a way in, even downtown.
