    Tucked down a back alley near Ameya-Yokocho, this old-school tonkatsu shop earns a Michelin Bib Gourmand for thick pork loin cutlets fried slowly in lard at a gentle heat, a Western technique the third-generation chef picked up in Europe and quietly brought back to Ueno. Four condiments on the table, rock salt to Worcestershire, invite some experimentation. There will be a queue, which in this neighborhood tells you more than any review could.
