Diners queue on the sidewalk before the doors open, which tells you something about how this no-reservations live-fire restaurant on Milwaukee Ave operates. Everything passes over, under, or through the flames, from the foie gras ganache on grilled hearth bread to the butter cake that comes out of the fire with a crackling crust. The chefs' counter, where you can watch the whole production up close, is the seat everyone actually wants.
