The heat here comes with smoke and funk, built from cured meats, fermented black beans, and pickled chilis rather than pure fire. Grab one of the carved booths in the back if you can, where you're close enough to the kitchen to feel invested. The Michelin Guide has had its eye on this place for a reason.
