A Michelin-starred tasting-menu restaurant in Mendoza where the region itself is essentially the co-chef. The kitchen works with local suppliers and a heritage food project tracing ingredients back to the area's earliest settlements, so goat, vegetables, and hyper-regional produce carry the menus rather than decorate them. Three tasting formats run from four to nine courses, and the sommelier's enthusiasm for what's in the glass matches the kitchen's for what's on the plate.
