    The name means "kiss" in the Niçois dialect, which tells you something about how Julia Sedefdjian runs this one-Michelin-star restaurant on the Left Bank. The cooking is deeply Mediterranean, rooted in her Nice upbringing, so bouillabaisse and pissaladière share a menu with charcoal-fired socca. A surprise tasting menu is the move if you want the full picture, and the bouillabaisse riff is the dish people come back for.
