    The restaurant's name carries two meanings: the generosity of a well-prepared meal and the frantic work behind it. Chiso Takayama is a Japanese dining room on the ninth floor in Minamiazabu where the kitchen builds each course around the season's produce, tracing an almost philosophical line back to the farmers and fishers who grew it. The mood echoes the tea ceremony idea of a moment that will never come twice.
