  1. The dining room is almost monastic, white walls and spare furniture that refuse to compete with what arrives on the plate. This is a Michelin-starred tasting menu restaurant in the 7th, where a Japanese chef channels years at Astrance and Mugaritz into pairings that read like riddles, foie gras with sea urchin, pigeon with cocoa, until they suddenly make complete sense. The ceremony of it is the point.
