A prix fixe Chinese restaurant on the second floor in Minami-Aoyama, with a Michelin star, where the menu reads like a culinary autobiography: Sichuan discipline on one page, Taiwanese restraint on the other, Japanese ingredients threading through both. The house-made doubanjiang and mala sauce arrive on the appetiser platter, bold and delicate trading turns. The name roughly means "to cherish," and the kitchen takes that rather literally.
