  1. A wall draped in wool offcuts from Norwegian folk costumes sets the tone before a single plate arrives. Maaemo is a three-Michelin-star tasting menu restaurant where the open kitchen is lit like a stage and the menu is a surprise from start to finish. Langoustine grilled over embers, dry-aged reindeer, petits fours in a speakeasy lounge: the kitchen speaks in a distinctly Norwegian dialect, and the room is very much in on the drama.
