A charcoal mural by Adel Abdessemed covers the dining room wall, a sort of urban bestiary that sets the tone for what follows. Pierre Gagnaire is a three-Michelin-star fine dining restaurant near the Champs-Élysées, and the chef's cooking is restless in the way that jazz is restless: each dish arrives with a constellation of small satellite plates spinning around it, making any single course hard to summarize and easy to remember.
