Shelves of house-made pickles line the walls of this minimalist dining room, the vaulted brick ceiling doing its bit to suggest somewhere serious. The chef grew up in Trás-os-Montes and built both tasting menus, seven or ten courses, around what producers can actually deliver that week. The food leans into the rugged northern interior, though the terrace on a warm Lisbon evening points decidedly in the other direction.
