    A Raleigh institution since 1947, Poole's occupies a restored diner counter and adjoining warehouse space where the kitchen delivers unfussy Southern cooking: tomato pie with real depth, slow-cooked shrimp, mac and cheese that justifies its reputation. The horseshoe counter itself is as much the point as what arrives on the plate.
