  1. Near the Saône, this modern bistro runs on market logic: the menu shifts with whatever looks good that week, and the kitchen keeps things bright and a little unexpected. Lunch is a short, affordable affair; evenings stretch into tasting menus. The room goes for distressed industrial with an open kitchen, which at this point is practically a genre. The sommelière, though, is the real differentiator, and worth leaning on.
