Yakitori Japanese
Two brothers run this yakitori counter in Sumida, one trained in other corners of Japanese cuisine and the other just as unlikely to have ended up here. Dinner is prix fixe, and the siblings trade off serving through the meal. Salt is the dominant seasoning, letting the locally raised chicken carry the argument. The name means something close to "pub," and the snacks are cut precisely to keep the sake moving. A Michelin Bib Gourmand.
