A tasting menu that moves through several rooms over several hours, organized around Japan's 72 micro seasons, is already doing something unusual. Sorekara, a two-Michelin-starred Japanese tasting room in Baldwin Park, runs one seating a few nights a week, and the menu has the nerve to include a course modeled on a convenience store snack run. The chef's sense of whimsy lands with enough precision that it reads as confidence rather than a gimmick.
