The handmade crockery came from the chef's aunt, which tells you something about how Suto operates. This tiny omakase counter near Sants station seats a handful of guests at a bar, all eating the same menu at the same time while Yoshikazu Suto cooks in front of them. It feels less like a restaurant than a dinner party you somehow got invited to. It holds a Michelin star, and the nigiri alone make that easy to believe.
