Charcoal grilling is the main event at this Michelin-starred kaiseki restaurant on the third floor above Kagurazaka's cobblestone lanes. The chef came up as a doorman at a ryotei, minding guests' shoes, and that early lesson in attentiveness seems to have soaked through to the bone. The meal closes with a parade of rice preparations, white, takikomi-gohan, chazuke, finished with tea poured by the chef himself, which is either very moving or very disarming, probably both.
