A bakery, an atoleria, and a full restaurant share one building in Centro Histórico, with comals turning out tetelas and tlayudas at street level and a shaded rooftop above. Olga Cabrera runs the whole thing, cooking Oaxacan dishes rooted in her childhood while putting the farmers who supply her front and center. Salsa comes made tableside, moles arrive fragrant and substantial, and the mountain views at lunch are free. The Michelin Guide gives it a Bib Gourmand.
