Pull back the curtain and you're at the counter of a yakitori omakase, a NoHo sibling to Tokyo's Torishiki, where the chef works skewers over binchotan charcoal with the focus of someone who has decided this is the only thing worth doing. The smoke becomes part of the room. One Michelin star.
