The sushi counter from the previous life is still there, and the current chef, who trained at a wholesaler then a ryotei before committing to fugu, still works behind it. This is an intimate, traditional pufferfish restaurant in Osaka's Sonezakishinchi, where wild-caught tora fugu arrive from Shimonoseki and the ponzu has been aging patiently on someone's shelf for what sounds like a very long time. It holds a Michelin star.
