The cooking is precise and quietly confident, and dessert gets its own moment to shine. Esquire named the Vesper martini among the finest in America, which is a strange fact about a farmhouse, and a good one.

The name is Provençal for "dining room," which sets the tone pretty neatly for this modern French bistro tucked into the North Salem countryside. White walls, dark wood, royal blue chairs, and big windows full of trees give it the feel of somewhere you'd actually want to linger.
