A circular fireplace cast in an ancient bronze map of Korea anchors the lobby of this 29-story Forbes Five Star luxury hotel in Gwanghwamun. The design nods to an old palace, then pulls it firmly into the present, with over 130 Korean artists represented throughout. Floor-to-ceiling windows on every floor split the view cleanly between Gyeongbokgung Palace on one side and a skyline of glass and commerce on the other.

Seasonal Mediterranean
Rocks and trees inside a third-floor dining room set the tone for what follows: a Michelin-starred Mediterranean restaurant where the vegetables and herbs come from the chef's own family farm about forty kilometers outside Seoul. The kitchen turns that produce into dishes with a distinctly personal take on Mediterranean cooking, seasonal and unhurried. It's a long way to go for a salad, obviously, but the farm isn't a talking point so much as the whole premise.

Korean
Fermented sauces, built in-house and changed with the seasons, do most of the heavy lifting at this Michelin-starred Korean tasting menu restaurant on the eighth floor of Gyeonghuidang. The courses follow a quiet, classical arc and close with a traditional Korean spread that arrives like a small banquet. Ceramics from local artists line the room, and the drinks pairing leans on traditional Korean spirits alongside wine, which makes the closing toast feel considered rather than obligatory.

The name translates to "secret lover," which sets the tone for a fine dining room on the 26th floor of a hotel that leans hard into Parisian atmosphere. The chef trained in the States and channels that back into Korean seasonal ingredients, the result being something that sits comfortably between familiar and foreign. A Michelin star makes the reservation conversation easier to justify.

Marble floors and chandelier light greet you before you've even found the check-in desk, which sets the tone for this grand city-center hotel on Eulji-ro. Rooms run larger than the Seoul average, done up in warm neutrals that feel calmer than the lobby's palatial ambitions suggest. Pierre Gagnaire is in the building for French fine dining, and Mugunghwa reworks Joseon royal court recipes a few floors away, so you can stay in all weekend without really trying.

Korean
The soup runs out and then they close, which tells you most of what you need to know about Hadongkwan. This old-school gomtang shop in Myeongdong has been ladling the same clear, bone-deep beef broth since forever, served with brisket, rice warmed in the soup itself, and chopped scallions. Come early, expect a line, and order the kkakdugi on the side. It is a bowl of breakfast that makes a strong case for rethinking breakfast.

The marble baths sit right in the middle of the room, not tucked away, which tells you everything about what kind of hotel this is. A luxury boutique in the thick of Myeongdong, it was founded by a Korean film actor and leans into the conceit fully: monochromatic suites, retro lamps, framed black-and-white movie stills, and a library with a projector. Cinephile cosplay, maybe, but the bones are genuinely beautiful.

The canopy beds have embroidered headboards and the clawfoot tubs have mirrored doors, so yes, this is a hotel that committed to its Belle Époque bit completely. Jacques Garcia designed the rooms to read like a very comfortable 19th-century Parisian fantasy, and the sunlit Winter Garden and French salon library keep that mood going outside them. The voice-controlled curtains are the only thing giving the century away.

Korean Noodle Shop
Cold buckwheat noodle shop in Gwanghwamun where the noodles come stacked two tray-baskets high and a kettle of chilled dipping sauce arrives alongside a spread of daikon, wasabi, laver, and green onions so you can doctor it yourself. They mill and press everything in a basement factory, which explains why a place this old-school has held a Michelin Bib Gourmand. Pull a number, find a seat, and don't skip the laver.

Korean Noodle Shop
Buckwheat noodles made entirely from scratch, with flour sourced and milled by the chef himself, are the reason this memil-guksu shop near Namdaemun has followed its regulars across multiple moves and still fills seats. The broths are clean and fragrant in that way only hand-worked buckwheat manages. Pork shoulder dumplings and jeyuk round things out for the table that can never order just noodles. The Michelin Guide awards it a Bib Gourmand.

Korean Noodle Shop
Buckwheat noodles made fresh every morning from Bongpyeong flour and Bigeumdo sea salt are the draw at this old-school noodle shop in Jung-gu, which has been feeding Seoul a bowl at a time for longer than most of its regulars care to count. The memil-guksu arrives topped with seasoned vegetables, egg ribbons, and a sweet-spicy sauce. The wheat noodle soup with fishcake is the move when you want something hot and brothy. Michelin Bib Gourmand.

Fine Korean dining on the 38th floor of the Lotte Hotel, where the city spreads out below and the menu works from an old principle that food and medicine aren't really separate things. The kitchen leans into fermented elements and seasonal ingredients, producing dishes that feel both rooted in tradition and quietly considered. Dress accordingly, and maybe skip the business lunch if you want to linger.

French
A French dining room inside the Westin Chosun that's been around long enough to watch Seoul's restaurant scene reinvent itself several times over. The kitchen leans on classic French technique while the renovation nudged things toward something more current. After ten, the bar counter runs a wine-tasting program, which is either exactly what you need or a very elegant way to miss your last train.

Chinese
Thirty-seven floors up in the Lotte Hotel, this Chinese restaurant earns its altitude with floor-to-ceiling views of Seoul and a room that takes itself seriously without being stiff. The menu runs from dim sum through regional Chinese dishes, with seafood doing a lot of the heavy lifting. Private rooms in various sizes mean this is where families and deal-closers both end up, sometimes in the same evening.

Barbecue
A charcoal barbecue restaurant tucked down a back alley off Eulji-ro, modeled on the rural grill culture around Jirisan Mountain in the south. Black pork sourced from that region is the draw, salt-cured and aged before hitting the fire, with gochujang pork belly following close behind. The siksa menu of noodles and soups is there for when the table needs something to soak up the smoke. Seoul office workers and out-of-towners crowd in for a meal that feels genuinely countryside.
