    A hallway lined with glass cabinets of fermenting and aging ingredients, some sitting there for a decade, sets the tone before you reach the room itself. 7th Door is a 14-seat tasting menu restaurant in Gangnam where a former musician turned chef builds contemporary Korean cooking around fermentation as both technique and philosophy. It holds a Michelin star and ranks on Asia's 50 Best list. Three hours, one long counter, one open kitchen.
