A Michelin-starred counter restaurant on the Kai where roughly a dozen seats wrap an open stainless steel kitchen and the chef's table is the only table. The nine-course set menu takes about three hours to move through Korea, though Austrian trout and European technique show up along the way without apology. The team are generous about explaining what you're eating, which helps when the menu reads like a glossary.
