This is a Nikkei restaurant and cocktail bar where the chef, a Peruvian native, works the Japanese-Peruvian crossover with a light hand and sharp contrasts. Tasting menus and à la carte both run alongside a sip pairing, small cocktail tastings built around Nikkei ingredients, which is a more considered idea than it sounds.
