The name means "emptiness," which turns out to be a design philosophy as much as a word. Bium is a fine-dining tasting menu restaurant in Gangnam built around Korean Buddhist temple cuisine, entirely plant-based and free of onions and garlic, with each course mapped to one of the four elements. The room is wood, handmade paper, and artisan ceramics, and the silence feels deliberate. It holds a spot on Asia's 50 Best Restaurants list.
