Ignacio Mattos built this downtown bistro on shareable plates that pair ingredients in ways that seem obvious only after you've eaten them. The room on Houston stays lively without tipping into loud, and the wine list rewards a little conversation with whoever's pouring. A Michelin star and a perennial spot on the Times' best-of list haven't made it precious. The crowd dresses like it might have somewhere better to be, then stays for another round.
