Pasta made from heritage grains ground by an artisan miller anchors this modern restaurant on the boulevard Saint-Germain, the third in William Ledeuil's small empire. The kitchen folds in Asian herbs and broths alongside Italian forms, so coquillettes might arrive in a Thai broth with chicken wings and olives. It's a more casual register than Ledeuil's flagship, but the cooking is no less considered.
