1. A proper tempura counter in Nishitenma where the chef clearly has opinions about what's worth frying and when. Seasonal ingredients get a whisper-thin batter and a quick turn in safflower oil, so everything tastes exactly like itself, just crispier. The kakiage gets a hit of red pickled ginger, which is very Osaka and very good. The crowd is the kind that books ahead and eats quietly, because they know what they're here for.
