    A counter spot in Nishitenma where the chef spent serious time in Galicia and the Basque Country, then came home and started weaving Japanese ingredients into those northern Spanish traditions. The result is something you genuinely can't find anywhere else: coastal Spanish cooking with kudzu and soba showing up where you'd least expect them. Feels personal and considered rather than gimmicky, and the counter keeps things intimate.
