A three-story building in Jardim Paulistano given over entirely to one tasting menu, where the ground floor starts you with canapés and a wine cellar before the open kitchen on the second floor takes over. Chef Ivan Ralston rebuilds the menu each season around São Paulo produce and contemporary technique. Three Michelin stars and a spot on the World's 50 Best list, yet the room feels quieter and more deliberate than those credentials suggest.
