Meat eaters aren't entirely abandoned, but the kitchen's heart is clearly in the shells and fins. Chic without being stiff, and the kind of room that makes you order one more course.

The wine pairings are quietly serious, chosen by the maître d' with the same unhurried care that seems to govern everything here.



  9. A fish tank replenished daily sits at the center of this seafood restaurant inside a historic harbour warehouse on Texel, where shrimp boats bob just outside the windows. The kitchen leans French with Asian detours, pairing Wadden oysters and scallops with ponzu and ginger. A moss-covered wall softens the industrial bones. Designer suites upstairs mean you can eat your way through the menu without worrying too much about the drive home.
