Hyun
Korean
Hyun butchers its Japanese A5 Wagyu in-house, and the tableside grilling is the whole show. It's a Korean barbecue restaurant, though the word "barbecue" barely covers the sleek dark wood, cool slate, and private dining rooms. The signature omakase runs through a dozen cuts, each one cooked to order, with house kimchi and a scallion salad doing the balancing work. Rice with uni and truffles keeps things humble. Dress accordingly and bring someone who won't flinch at the bill.
