The room used to be one of the concert venues of Movida Madrileña, and the bones of that history are still visible in the bioconstruction fit-out. Tramo is a contemporary Spanish restaurant with a social mission baked into the model, employing people who face real barriers to the jobs market. The menu runs on ingredients from small Spanish farmers and local producers, which gives the cooking a grounded, unfussy quality that suits the space.
