Lamb barbacoa, slow-cooked in a specialized oven built to mimic an underground fire pit lined with maguey leaves, is the whole reason this roomy Chula Vista restaurant exists. It's a build-your-own taco situation: fresh tortillas, salsas, garnishes, and a rich lamb consomme on the side. The kitchen has been doing essentially one thing for decades, and the zucchini flower and huitlacoche quesadillas are the only real detour worth taking.
