Sushi
Six chairs at an oak counter, a black curtain, and a meal that starts at six on the dot. This is an omakase sushi counter in the most committed sense: one chef, one seating, fish chosen by season and that morning's weather. The conversation is part of it, the chef explaining each choice as he works the counter. A Michelin star and White Guide Masters Level sit quietly in the background while he gets on with it.
