    The signature dish here is called the Whole Beast, built from leftover proteins, noodles, and produce so that nothing walks out the back door. The Heritage Table is an innovative restaurant where the chef, a James Beard semifinalist, runs the kitchen around whole-animal and whole-vegetable thinking. Saturday evenings bring a tasting menu sourced entirely from the Blackland Prairie, reservation required, which tells you the room takes itself seriously without being smug about it.
