The best places to eat in the United States, according to the experts: AAA, The 50, and the Michelin Guide have all weighed in, and their honors are what rank this list. Atomix comes out on top, and the good stuff runs deepest in New York.
More Less
Jungsik New York and Quince hold the next two places. The Michelin Guide shows up on more of this list than any other guide, with AAA next.

Korean
A 14-seat counter in a Murray Hill brownstone basement, where each course of a modern Korean tasting menu arrives in bespoke ceramics with a card explaining its origins. The exterior is so understated that first-timers cluster on the sidewalk wondering if they have the right address. Two Michelin stars, a James Beard Award, and a spot at number twelve on the World's 50 Best Restaurants list suggest they do.

Korean
The Dolhareubang dessert, a miniature Jeju Island stone figure set in a traditional garden of toasted rice ice cream and black bean mousse, tells you exactly where you are: a tasting menu restaurant where Korean culinary tradition gets remade from the ground up. The Tribeca dining room is muted and minimal, which lets the nine courses do the talking. Three Michelin stars, a James Beard Award for Outstanding Chef, and a spot on North America's 50 Best.

Californian
The dining room was overhauled in fawn and sage, the ceilings soar, and there is velvet, which tells you exactly what kind of evening you're walking into. Quince is a tasting-menu restaurant in Jackson Square where the kitchen draws heavily from its own farm, and the chef holds three Michelin stars and a James Beard Award for Outstanding Chef. Service runs seamlessly without tipping into ceremony, which at this level is the harder trick.

The open kitchen anchors a lounge-like room in Chicago's West Loop, and what comes out of it has earned Smyth three Michelin stars and the top spot on North America's 50 Best list. The tasting menu leans on Midwest seasons and a farm garden, but the cooking is genuinely strange in the best way: foie gras doughnuts, kelp tarts, lobster custard with raspberry butter. Strange enough that you stop second-guessing the kitchen about halfway through.

French
The menu arrives as a poem, literally, and the meal that follows is Dominique Crenn's three-Michelin-star argument that fine dining and a pescatarian kitchen are not in tension. The eight-table room in Cow Hollow is filled with her father's artwork and family photos, and the tasting menu works through seafood and produce with French technique and a modernist's sense of play. French Seafood
Eric Ripert's three-Michelin-star seafood temple in Midtown runs on French technique and a quiet confidence that doesn't need to announce itself. The menu moves from nearly raw to lightly cooked, and the room, all white tablecloths and soft jazz, fills nightly with people who dressed for the occasion. The thinly pounded yellowfin tuna over foie gras toast is the dish that gets talked about. The sommelier just won North America's Best Sommelier Award, which tracks.

Japanese
The opening course arrives as a sculptural hillock of moss and wildflowers with raw fish and farm produce nestled inside it, which tells you almost everything about what follows. This is a three-Michelin-star kaiseki-influenced tasting menu in Sonoma wine country, built around a 24-acre farm run by the chef's wife. Japan meets Northern California across ten courses, with the kitchen's donabe work a quiet obsession. It holds a Forbes Five Star and a spot on the World's 50 Best list.

Inside the Fairmont Grand Del Mar, with arched windows framing the canyon and a glass wine cellar standing in the center of the dining room like a statement of intent, Addison is the kind of California fine dining room that makes other fine dining rooms feel like they're still figuring it out. William Bradley holds three Michelin stars and a Forbes Five Star, and his tasting menu moves from chicken liver churros to caviar-crowned rice with a confidence that is, frankly, a little disarming.

A courtyard full of earthenware crocks, each housing a different fermentation experiment, is how Corey Lee introduces himself before you've touched a menu. Benu is a tasting menu restaurant in SoMa holding three Michelin stars, and the dining room's monastic quiet makes the food's color and technical audacity land harder. Lee's Korean roots fold into California's pantry across a long, ever-changing progression where restraint does more work than flash.

Live-Fire Palestinian
Everything at this Palestinian live-fire restaurant in Navy Yard passes through a roaring open hearth before it reaches the table, and the renovated dining room leaves the kitchen's fire in full view. Michael Rafidi, a James Beard Outstanding Chef winner with a Michelin star, draws on his family's Ramallah roots while working with mid-Atlantic seasons. The tasting menu is the move, though the wood-fired lamb pies and hummus hold their own à la carte.

You arrive through a converted freight elevator in what used to be a warehouse, which sets the tone before you've touched a menu. It holds two Michelin stars and a James Beard Award, and the room earns both the ceiling collage and the hushed reverence of everyone in it.

A Victorian house steps from Sonoma Plaza conceals one of the more quietly ambitious tasting menus in Northern California. Chef Brian Limoges runs a multi-course fine dining experience that filters his New England upbringing through local ingredients, including produce from an affiliated farm nearby. Southern Thai
A skylit Fishtown warehouse with pistachio-green bar, rattan furniture, and colossal potted palms sets the scene for chef Nok Suntaranon's Southern Thai restaurant, a James Beard Outstanding Restaurant winner. The food makes a case that Thai cuisine belongs nowhere near a takeaway box: bird-shaped dumplings hide caramelized cod, and the tamarind-glazed pork chop has genuine chophouse swagger. Reservations are hard to get even after the place quintupled in size.

Pan pizza with a ring of caramelized mozzarella baked right into the crust is the move at this West Town pizza shop, which draws from the legacy of Chicago pan legend Burt Katz. Tucked above the chaos of Columbus Circle, it runs on a quiet, unhurried ceremony where chefs and servers move like they've rehearsed. Truffles, caviar, foie gras nigiri: the kitchen works the line between luxury and excess. Two Michelin stars and a Forbes Five Star.

Freshly pulled radishes arrive with browned butter before you've looked at a menu, which tells you everything about what Dan Barber is doing at this two-Michelin-starred tasting room on a working farm in the Hudson Valley. The procession that follows is theatrical and farm-obsessed, rooted in whatever the land is doing right now. Crisped linens, fine crystal, and a meal that could end with a tower of milk desserts, because the farm started as a dairy.

Named for a Caribbean island off the Yucatán coast, this Michelin-starred coastal Mexican seafood counter sits inside Mercado La Paloma in South Central, sharing the space with six other vendors and no liquor license, so lemonade it is. The chef grew up spearing fish on that same peninsula, and the ceviches, aguachiles, and grilled lobster on heirloom corn tortillas taste like it. North America's 50 Best lists it at number 26.

James Syhabout's two-Michelin-star tasting menu restaurant on Piedmont Avenue runs calm and unhurried, which is its own kind of trick on a street that packed. The room is long and spare, servers wear ties and crumb your table, and the food draws quietly on his Thai and Chinese heritage without announcing it. That slow-poached egg yolk has become a regular's religion. Cool and relaxed, but never, as the room itself seems to know, actually casual.

Californian Mexican
The kitchen is fully visible behind glass, so you can watch the team plate while you sit in a tasting room that looks out over the northern Napa hills. This is fine dining inside the Four Seasons Calistoga, with a Californian menu that threads a Mexican influence through Wine Country produce, garden herbs, wagyu, crudo, masa. It holds a Michelin star and AAA Five Diamonds, and the James Beard committee has noticed the chef.

The triangular house slice here has a quiet cult following, which is funny for a spot that built its name on thick, square Sicilian cuts. Ten seats at a sleek counter on a cobblestoned West Village street, and the whole meal is in the chef's hands.
