This lively modern tapas spot seats guests around a central counter while the chef freestyles through whatever the market brought that morning, folding Latin American, Asian, and Mediterranean ideas together without much apology. The sommelier half of the duo runs the room with genuine ease and always has a wine pairing worth following.
