The best sushi in Germany, according to the experts: the Michelin Guide has weighed in, and their honors are what rank this list. Aska comes out on top, and the good stuff runs deepest in Hamburg and Berlin.

Basho-An and Chang hold the next two places.

  1. The name means "ash," and the room is dark to match: a compact sushi counter tucked inside the same building as Storstad, its Swedish-named sibling. The chef trained in Osaka and serves set menus in the classic Japanese style, course by course at the bar or in one of a few booths. Free-flowing green tea and mineral water come with the meal, which is either charmingly generous or quietly embarrassing for every other restaurant in Germany. One Michelin star.

  2. A sushi restaurant near the pedestrian zone, Basho-An keeps its dining room stripped back in the Japanese mode, with a few seats at the counter for those who like to watch. The lunch set draws a faithful midday crowd, while dinner stretches into a fuller menu, vegetarian dishes included. Sake sits alongside a short regional wine list. Book ahead or you'll be eating somewhere else.

  6. Rank 2. HENSSLER

    Modern Sushi

Sitting between the Holzhafen and the Altona Fish Market, surrounded by fishmongers on all sides, HENSSLER is a modern sushi restaurant where the setting does half the storytelling. The kitchen runs wide and open, turning out creative sushi alongside things like black cod-style Atlantic cod and steak tataki. The room is minimalist and lively, the vibe is casual, and the senior Henssler tends to wander into service himself. Book ahead for lunch or dinner.

    Omakase Japanese

Tucked inside Tim Mälzer's Bullerei, this intimate omakase spot runs a five-course surprise menu with the kind of loose, unhurried energy that makes you forget you're eating in someone else's restaurant. The chef will wander out to walk you through the plates, and if you know what's good for you, you extend the menu to include the Toast Hawaii, a retro classic played straight with a knowing smile.

  8. Rank 2. Minato

    Sushi

A sushi restaurant inside Das James, a hotel occupying a former naval building on Flensburg's marina, Minato runs two set menus: a sushi menu and an omakase. The room has a clean, quietly Japanese feel, and the service is the kind that remembers your name by the second visit, which explains why regulars fill it steadily. Not a bad perch for watching the harbor while someone else decides what you're eating.

  9. Rank 2. OTSUKA

    Sushi

A tiny omakase counter tucked inside a building near Nordbahnhof, sharing a roof with an organic supermarket, which tells you something about Berlin. The chef works right in front of you, pressing nigiri to order and sliding them across a plain wooden counter. Three seatings a day keep it unhurried, and the price point makes the whole thing feel slightly unreal for what lands in front of you.

  10. Rank 2. The Sakai

    Contemporary Sushi

A basement omakase counter in Frankfurt where the chef behind five Tokyo establishments brings a sleek, minimalist room and a menu that bends to the guest: number of courses is your call, and a vegan version exists alongside the main run. The Wagyu set draws its own following, and the drinks list pairs sake or wine with equal seriousness. House-made cola keeps things interesting for the non-drinkers.

      Stay Score

Four fifths of the score is the awards it's won, weighted by who gave them: a Michelin Key outweighs a listicle. The last fifth is where it is: the ranked places to eat and things to do around it, and how safe the country is. When you sort by what's nearby, distance from you changes the order, never the score.

          Best Place Score

The Best Place Score rates the area around a point, not any one place. The places are 60% of it: the best of what's within reach, weighed by distance. The setting is the other 40%: how life goes in that country (how people rate their own lives, how long and how well they live, how safe they are) and what it's like right there (the air, and the weather). If the score looks low, we probably haven't found enough critics out here yet.
