Japanese Barbecue
A5 wagyu, and nothing else, is the policy at this Japanese yakiniku restaurant, where the menu commits fully to beef from Japanese black cattle and asks you to do the same. The omakase format works through more than seven preparations, including wagyu as sushi, each cut singed tableside to a barely-there crust over pink. It is, by design, a place for people who consider meat a serious subject.
