Umberto Bombana's fine dining room, named after his favorite Fellini film, holds two Michelin stars and a Discovery nod from the World's 50 Best. Besuited waiters can discourse at length on Italian wine regions, and the aperitivo bar runs a negroni fortified with sweet wine and grapefruit bitters, so there's no reason to rush to your table anyway.

The Salvo brothers set up a Neapolitan pizzeria in Beijing and, somewhere along the way, made it a serious reference point for the form across Asia. The dough is soft and properly blistered, the crust light enough to suggest restraint but satisfying enough to suggest experience. Classic pies lean into tradition without apology; a few contemporary options show the kitchen hasn't stopped thinking.
