This University Village bagel shop does one thing obsessively well: baking rounds with crackly, golden exteriors and a chewy, fragrant interior that makes you realize most bagels have been lying to you. Fair warning, they won't slice, toast, or schmear for you. Cream cheese comes on the side for ripping and dipping, New York style. Purists will get it immediately; everyone else comes around fast.
