An agriturismo outside Brescia where the menu shifts nearly every week because the seasons say so. Much of what lands on the table is grown or raised on the property, then put over fire with a discipline that keeps the cooking tasting like food, not technique. The barbecue leans into offal and vegetables in equal measure, and the house goat's milk butter, served soft enough to spread with a glance, is the kind of detail people mention unprompted on the drive home.
