Rebecca Masson, the pastry chef Houstonians call "the Sugar Fairy," runs this bakery out of the Heights with the kind of conviction usually reserved for savory kitchens. Expect elevated childhood nostalgia: snickerdoodles, layer cakes, and the Couch Potato, a single cookie that somehow fits potato chips, pretzels, cornflakes, marshmallows, and chocolate chips. It's a lot, in the best sense.

The egg tart has a following from Jane Wild's farmers market days, and it followed her here to this brick-and-mortar bakehouse in the Heights. The menu rotates through toasts, sandwiches, and salads built around a no-waste kitchen philosophy, but the sourdough is a constant. It's the kind of neighborhood bakery where the sourcing matters as much as the output, and the regulars already know it.

Hidden Omakase is an 18-seat omakase counter tucked inside a strip mall, where Marcos Juarez, an Uchi alum, runs through nigiri that pulls Thai, Vietnamese, and Latin influences into the lineup. Been a neighborhood staple long enough that ordering without looking at the menu is a point of local pride.
