Coché Valley is a bingsu spot on Capitol Hill that treats shaved ice like it deserves a seat at the fine dining table, which means your dessert arrives on an unlit portable burner and somehow that's completely correct. The milk base shaves into delicate ribbons, fresh fruit and cheesecake chunks pile on top, and a scoop of ice cream crowns the whole thing. It's gloriously messy and worth every napkin.
