The best places to drink and stay in Australia, according to the experts: The 50, the Forbes Travel Guide, and the Michelin Guide have all weighed in, and their honors are what rank this list. Capella Sydney comes out on top, and the good stuff runs deepest in Sydney and Melbourne.
More Less
Caretaker's Cottage and Maybe Sammy hold the next two places. The Michelin Guide shows up on more of this list than any other guide, with The 50 next.

A former Department of Education building, all golden Edwardian sandstone and ornate bones, now holds one of Sydney's more considered luxury hotels. The restoration layers Aboriginal art and bush-scented spa products into what could easily have been a generic grand-hotel renovation. The 20-metre pool sits where an art gallery once stood, which feels about right. Ranked 12th on the World's 50 Best Hotels list, and holding a Michelin Key.

Cocktail Bar
Jacketed bartenders with accents spanning small Slovakian towns to big Italian cities set the tone at this cocktail bar in The Rocks. The hospitality runs flamboyant, the kind where staff practically compete for your affection and the host seats everyone like a penthouse guest. Named one of the World's 50 Best Bars, Maybe Sammy drinks from a European hotel-bar playbook that Sydney had no idea it was missing.

A 30-metre pool with its name spelled out in gold tiles tells you everything about what The Calile is going for. This Brisbane hotel leans into pastel-and-cabana luxury, Richards & Spence's design channeling modernist Miami through a distinctly barefoot-Australian lens. Six restaurants, open-air corridors, cork floors designed for bare feet, and staff in linen uniforms who treat every request with cheerful "no worries" ease. It holds a spot on the World's 50 Best Hotels list.

Floor-to-ceiling windows on the new rooftop suites frame the Opera House close enough to feel slightly unfair to every other hotel in Sydney. This is a luxury hotel right on the harbour in the Rocks, practically under the Bridge, and it has the Michelin One Key and Forbes Four Star to show for a recent renovation that replaced a dated nineties interior with something considerably more composed. Butlers are plentiful, marble baths are standard, and the staff manage to be both professional and genuinely warm.

Rank 6. Gimlet at Cavendish House
European Steakhouse
Andrew McConnell's fine dining room inside the grand Cavendish House on Russell Street turns on an open fire grill and dry-aged Victorian and South Australian beef, which landed Gimlet a spot on the World's Best Steak Restaurants list. The room manages to feel glamorous without feeling stiff, and the wine list reads like someone actually thought about what goes with the food rather than just buying everything.

A Georgian facade on a quiet Kent Street side street, a short walk from the Rocks but removed enough to feel genuinely calm. The Langham is a luxury hotel where the televisions hide inside armoires and slippers wait in cedar wardrobes, which sets the tone. Rooms run to marble bathrooms, mahogany, and deep fabrics in a Regency register. A Michelin Key and Forbes Four Star property that leans boutique in feel despite the full-scale amenities.

Most of the 531 rooms look out over Sydney Harbour, which sets the tone for a large, full-service hotel that takes its location in The Rocks seriously. The spa and outdoor pool give you somewhere to decompress before a night in the restaurant, and the concierge team is the kind that actually follows through. The Michelin Guide lists it with one Key.

Perched at the top of Collins Street overlooking St. Patrick's Cathedral, this luxury hotel is the kind of Melbourne landmark that many locals somehow can't place, which keeps the grand split-level lobby pleasantly uncrowded. Rooms run oversized, mixing Art Deco bones with Japanese-style sliding panels and Italian marble bathrooms. A 25-meter edgeless pool hides on an upper floor, and the suites come with fireplaces or terraces that feel almost satirically generous.

A series of restored 19th-century state government buildings, all soaring arches and white columns, makes for an unlikely but very convincing luxury hotel. The 48 rooms are cool, pale, and quiet, with heated stone bathroom floors, freestanding oval tubs, and blackout curtains run by remote. There's a rooftop restaurant, a spa, and a cocktail bar. Perth is a long way from anywhere, which is precisely when a hotel this considered earns its keep. It holds a Michelin Key and a Forbes Four Star.

The marble lobby sets the tone: soaring ceilings, a black-and-red palette, and a sense that someone thought carefully about every surface. This 171-room luxury hotel in Pyrmont sits inside The Star resort complex, which means five restaurants, a casino, and a cocktail bar are all within a short wander if you never feel like facing the city. The harbor views are spectacular, and the central business district is walkable. A Forbes Four Star property.

Rank 13. ANTE
Modern Australian
An extensive vinyl collection spins through a high-end sound system, and the whole bar is arranged around taking that seriously, kissa-style, the way listening bars in Japan are. ANTE is a drinks-forward spot in Newtown where the sake list runs deep, with producer notes detailed enough to actually teach you something. It rewards a slow, curious approach to the menu rather than a quick round, which is either a warning or a recommendation depending on your Thursday night.

Tucked into a Melbourne shopping complex in a way that makes passersby do a double-take, Byrdi is a cocktail bar built around seasonality and local ingredients handled with the kind of precision that blurs the line between bar and kitchen lab. The team behind Singapore's Operation Dagger runs the show, and the drinks follow an almost culinary logic. It landed on the World's 50 Best Bars list, which tells you the curious head-twist is worth acting on.

The floor-to-ceiling windows on the harbor-facing rooms put you at eye level with the top arc of the Harbour Bridge, which is one way to wake up. This luxury hotel in the Rocks sits close enough to the Opera House to feel like the center of Sydney, and the 36th-floor bar earns its press. Downstairs there's an honest pub with a terrace for a pint in the sun, which suggests a certain self-awareness. The spa, pool, and marble baths do the rest.

Rank 16. Bar Liberty
Modern Australian
Champagne sabrage lessons are on the curriculum at this quietly chic Fitzroy wine bar, which says something about the crowd's commitment. The wine list is the real point, organized by style and leaning into macerated whites, orange wines, and chilled reds alongside the expected classics. The cocktail list is small and a little kooky, which is exactly right. Everything, down to the coffee beans, is sourced with the kind of care that borders on obsessive.

Thirty-five floors above Darling Harbour, most of the 590 rooms position a deep soaking tub flush against floor-to-ceiling glass, which is either a design statement or a dare. This is a large-scale luxury hotel where the rooftop infinity pool has a Mediterranean bar with striped umbrellas beside it, the ground floor runs a Champagne Bar with over 30 French pours, and the harbor promenade puts the Opera House and Harbour Bridge within a short walk.

A pink London taxi idles outside the entrance, which tells you most of what you need to know about The Langham Melbourne's approach to subtlety. This luxury hotel sits along the Yarra in Southbank, close enough to the Arts District and the famous laneways to feel central. Chandeliers and floor-to-ceiling flower arrangements fill the lobby, rooms come with marble soaking tubs, and the Club Lounge serves evening drinks on a schedule precise enough to set your watch by.

Two circular windows stare out from the red-brick facade like the building is watching you back. Hyde Melbourne Place is a 16-story hotel above Flinders Lane where the rooms are individually styled, suites open onto city-facing patios, and the lobby runs video installations the way other lobbies run cable news. The sandstone arcades of an 1851 Treasury Building form the bones of this landmark Sydney hotel, with 509 rooms stacked in a modern tower alongside it. Window seats frame views that run from the Royal Botanic Garden to the Opera House and Harbour Bridge, with harbour-facing rooms getting the better end of that argument. Byredo bath products, locally sourced minibars, and a rooftop bar 32 floors up round out a stay that puts Circular Quay a five-minute walk away.

An old industrial building in Surry Hills, close to the CBD, converted with enough retained patina that the brick walls do the decorating for you. The Ace Hotel Sydney holds a Michelin Key, and rooms come with vintage wool blankets and retro styling, with the occasional turntable or acoustic guitar thrown in. Every room comes with a balcony or terrace, which feels almost reckless for a Sydney hotel at this price point. The EVE is a boutique hotel on the edge of Redfern and Surry Hills, right on Wunderlich Lane, where the cafés and bars run late. Floor-to-ceiling glass hovers over mallee scrub on Kangaroo Island's southwest coast, which is about as remote as luxury gets in Australia. This 25-room coastal lodge runs on a fully inclusive model, open bar and gourmet meals included, so the main decision each morning is whether to join a sea lion tour or simply watch a kangaroo wander past from the sunken lounge. The spa has the same view, and reportedly so does the wildlife. Holds a Michelin 2 Keys and appears on the World's 50 Best Hotels list.

Twenty-four white-sand beaches and no one on most of them: that's the pitch for this remote luxury resort on the Great Barrier Reef, a Michelin 3 Keys property that takes commitment to reach and none whatsoever once you're there. Cocktail Bar
A bar built around a bottling operation is an unusual anchor, but PS40 commits: the house sodas, made from local ingredients with no preservatives, drive the whole menu. The bush tonic alone runs through Peruvian cinchona bark, lemon myrtle, and native lemongrass. Cocktails pair those sodas with equally niche spirits, and the list reads like a festival lineup. Find the entrance down Skittle Lane, which feels about right.

A Collins Street address tucked between designer boutiques, with laneway bars on either side doing their best to slow you down before check-in. This is old-school Melbourne luxury, and the Grand Hyatt has been around forever, yet the rooms and common areas read as modern rather than museum-piece. The staff retention is the real tell: some team members have been here for decades, which at a hotel this size is less a fact and more a personality trait.

Mezcal Cocktail Bar
A mezcal cocktail bar wedged into a Council Place garage so small it might have previously housed a single hatchback. Cantina OK is the opposite of Sydney's big-shoulder waterfront bars, the ones that eye your footwear suspiciously. Sandals, cowboy hats, and ball gowns all get waved through here, and the agave list runs deep enough that you'll stop pretending you know what you want and just ask.

The 23-foot woven ceiling in the lobby sets the tone: this is a resort hotel that took Western Australia's landscape as a design brief and followed it all the way to a lagoon pool and an 8,000-piece ceramic mosaic behind reception. QT Sydney cranks the Art Deco glamour and historical color so high you half expect a flapper to step out of the elevator. Rooms are deeply, unapologetically theatrical, bathrooms especially lavish. Downstairs, the Gowings Bar and Grill and Gilt Lounge pull in enough stylish locals to remind you the CBD has a pulse. The Michelin Guide awarded it one Key.

Concrete walls, lacquered red accents, and lobby installations by local artists signal that this Fitzroy hotel is trying to be something other than a hotel. The StandardX is the group's first offshoot property, and it wears the neighborhood's warehouse-bar energy without much effort. The rooftop pours cocktails over Melbourne skyline views, and Bang downstairs runs seasonal plates with local wine. Selected by the Michelin Guide.

Sixty-three stone villas spread across 161 clifftop acres on Kéa, an island most people can't place on a map but Athenians have kept to themselves for years. The resort sits above the Aegean with infinity pools, living-roof villas, and a helipad for guests who find the speedboat too casual. Reclaimed wood, potted plants (an actual rarity in hotels), and creamy natural tones set the mood at this Docklands property on the Yarra, where the whole design brief seems to be "what if a hotel felt like a forest floor." 1 Hotel's sustainability-first ethos runs through everything: low-intervention Australian wines, local Victorian producers across the four dining and drinking spots, and a Bamford spa with pool, sauna, and steam room. Full-kitchen, open-plan apartments in a Surry Hills terrace, selected by the Michelin Guide, aimed squarely at the visitor who'd rather cook a late dinner than flag down a bellhop. The neighborhood does a lot of the heavy lifting: some of Sydney's sharpest restaurants and bars are within a short walk, the city center is close enough, and the Harbour Bridge photo-op crowd is largely pointed elsewhere.

The 1930s Art Deco bones are the whole point here, and the Kimpton Margot leans into them without apology, filling the ornate interiors with enough art to make the corridors worth wandering. It sits on the southern edge of the CBD, just far enough from the main tourist drag to feel like a neighborhood hotel rather than a holding pen. Luke Mangan's modern Australian restaurant and a classic Sydney café keep it lively well past checkout time.

A converted Salvation Army printing works, the old brick facade and arched windows still legible at street level while a contemporary tower rises above. This apartment-hotel sits opposite Parliament Gardens, and rooms finished in blonde oak and soft gray look out over either the park or the city. More than 450 works by Melbourne artists hang throughout, which beats the usual corridor landscapes. St. Ali runs the lobby coffee, and Chronicle 502 handles modern Australian food and cocktails downstairs.

A heritage tobacco warehouse turned 122-room hotel in the CBD, with the original brick archways still doing their thing on the lower floors while a 36-storey tower rises above. Leather detailing on the armchairs and wardrobes nods to the building's mercantile past, and curved windows echo the old arches. Dining and drinking spread across five levels, and there's a heated outdoor pool when Sydney decides to cooperate.

The fin-shaped tower above Darling Harbour is hard to miss, which is rather the point. W Sydney is a hotel that leans into its own spectacle: vivid interiors, curved rooms shaped by the building's unusual geometry, and a top-floor infinity pool with views over the harbor. The restaurant takes its name from the elevated motorways on either side. If you've ever thought a W felt more like a mood board than a hotel, this one might change your mind.

A heritage-listed theatre on Oxford Street, converted into a hotel without quite forgetting what it was. Rooms split into two design personalities, Dreamers and Renegades, both leaning into the building's cinematic bones. Ground level gets genuinely busy: The Palomar's first outpost outside London, a croissant counter, a velvet cocktail bar, and a rooftop with DJs and skyline views. It sits at the hinge between Paddington, Surry Hills, and Darlinghurst, which is either convenient or dangerous.

The Coca-Cola sign still glows outside, which tells you this is Kings Cross even if the all-night bars have mostly given way to Japanese-French restaurants and independent galleries. A digital mural in the lobby rotates through past guests' filtered phone pics, which tells you exactly the kind of hotel this is: a converted 1800s wool factory in Pyrmont where the lobby, bar, kitchen, and restaurant blur into one open, buzzy common room. Each room is decorated to its own individual scheme, with marble bathrooms and no two feeling alike. Medusa is a boutique hotel in a converted Victorian townhouse on Darlinghurst Road, designed by Scott Werner with interiors that lean aggressively away from their origins. Rank 82. Capitano
Italian
The Art Deco fixtures cast a warm amber glow over off-white walls and chestnut wood, and the whole room reads like a 1950s New York neighbourhood joint that somehow landed in Carlton. Capitano is an Italian bar where the drinks are the point, though the pasta and pizza pull their weight too. Difford's Guide gives it five stars, which for a corner spot dressed this modestly is a mild plot twist.
