  6. Rank 7. Esora

    Modern Japanese

A monaka built around foie gras torchon instead of sweet bean paste signals the kind of modern Japanese cooking Esora is after. This intimate 26-seat kappo restaurant works in micro-seasons, and the chef's time at Odette and Nihonryori RyuGin shows in the precision. A tea-pairing program served in champagne flutes adds an unexpected, slightly theatrical grace note to the meal.

  15. Pink Gucci cranes on the walls of the second dining room set an unexpected tone for a sushi counter this serious. Chef Masaaki Sakashita flies fish and seafood in from Toyosu Market several times a week and works through it with traditional technique. The omakase runs about two hours, though the tea and dessert stage has a way of making that feel like a loose suggestion rather than a schedule.

  17. Ozaki wagyu, raised longer than convention allows, is the single organizing principle of this kaiseki restaurant on Tras Street. The chef came up through sushi and brings that same exacting focus to beef, working tongue-to-tail through grilled, braised, and deep-fried preparations before landing on sukiyaki with soft egg and black truffle. It's a serious, single-subject tasting menu in a city that does those well.

  21. Rank 22. Nikuya Tanaka

    Japanese Steakhouse

A counter-format Japanese steakhouse from Tokyo, where wet-aged beef goes over binchotan charcoal and the chef works close enough that the whole meal feels like a conversation you weren't expecting to enjoy this much. Warm timber, clean lines, no flourishes competing for attention. It landed on the World's Best Steak Restaurants list at number 30, which tracks for a room this focused on doing one thing without making a fuss about it.

Eat Score

The score comes from the awards it's won, weighted by who gave them: a Michelin star outweighs a listicle. When you sort by what's nearby, distance changes the order, never the score.

      Stay Score

Four fifths of the score is the awards it's won, weighted by who gave them: a Michelin Key outweighs a listicle. The last fifth is where it is: the ranked places to eat and things to do around it, and how safe the country is. When you sort by what's nearby, distance from you changes the order, never the score.

          Best Place Score

The Best Place Score rates the area around a point, not any one place. The places are 60% of it: the best of what's within reach, weighed by distance. The setting is the other 40%: how life goes in that country (how people rate their own lives, how long and how well they live, how safe they are) and what it's like right there (the air, and the weather). If the score looks low, we probably haven't found enough critics out here yet.
